The Difficulty of Cooking

The other day we were wondering what to have for supper and ended up with a spinach, mushroom, tofu stirfry with a coconut curry sauce. Quicker that ordering out...for us.
Had it been a workday, I would have used boiling water for the dried mushrooms or skipped them but we had everything in the fridge/cupboard. Quick and easy; same with homemade pizza being quicker than take away.

Then I read this piece about making gumbo with substitutes

People who can cook have cupboards with stuff that they can use to follow the YouTube videos that teach techniques along access to a fairly wide range of food. Then you have to become familiar enough with cooking to be able to put in substitutes and get a desired texture - I do that with vegan baking with varying levels of success.

It takes effort for me to imagine a food desert because I live in a small city yet get "summer" fruit in the middle of winter and our neighbours have gardens that overflow. We're building a greenhouse this year and will be sharing that with neighbours if we're sucessful. I try to advocate for urban/community gardens and greenhouses to provide lower the cost of food for isolated areas. Perhaps even provide employment.

Of course that takes time people may not have because they are working numerous low paying jobs.
